3 runner-friendly chili recipes perfect for chilly weather:

Heat avocado oil or canola oil in a large soup pot over medium-high heat. Add chicken and cook until just barely pink, breaking the meat into crumbles while cooking. Add onion, garlic, and peppers. Cook 2 minutes, or until beginning to soften. Add tomatoes (with their juices), and scrape to release any browned bits stuck to the bottom of the pot. Stir in chili powder, cumin, and salt and pepper to taste. Gently stir in beans. Bring to a boil, reduce heat to low, and simmer 30 minutes, stirring occasionally. Serves 4.
