2. In a large sauté pan, heat the oil over medium heat. Sauté the shallot, with the salt and pepper, for about 5 minutes until translucent. Add the lemon juice and white wine and let bubble for another 5-8 minutes until reduced in half. 3. Spray a 9×9 or 13×9-inch baking dish with non-stick cooking spray. Remove the stem and core from the tomatoes before thinly slicing. Lay the tomatoes in the bottom of the baking dish. Place the swordfish on top of the tomatoes. 4. Poor the lemon and white wine sauce over the fish and tomatoes. Top with the fresh basil. 5. Bake uncovered for 30 minutes, until the swordfish is just cooked through. 6. Serve with your choice of side, try the cauliflower puree below, and make sure to poor the juices from the pan over the fish and side.
