First, some background (and I should note here that the paper’s full text is freely available online, and its introduction does an excellent job of laying out the relevant issues). Carbohydrates are the primary fuel for endurance exercise, so traditional sports nutrition guidelines have focused on making sure you’re fully stocked with carbs before and during workouts and races. But in studies that date back for many decades, researchers have noted that if you do a workout with low carbohydrate stores, your body is forced to adapt to these conditions—the nutritional equivalent of wearing a weighted vest. In response, you may get a bigger boost in key endurance adaptations like the growth of new mitochondria, and perhaps (though this is heavily debated) start using your adundant stores of fat more readily.
