Summer squashes like zucchini provide a variety of vitamins, minerals, and antioxidants, such as eye-protective lutein and zeaxanthin. To retain the most nutrients, keep the peel on (wash well and buy organic, if possible). Ingredients 2 small cloves garlic, peeled, halved, and green germ removed 1 pound golden zucchini, yellow summer squash, or English cucumber, chopped 1 teaspoon fine sea salt 2 cups buttermilk, shaken to blend 1/4 cup minced dill or mint (or a combination of the two), or zucchini or squash blossoms cut into thin strips Instructions In a blender or food processor, mince the garlic.
